It was the last course of an exhilarating three-course Restaurant Week dinner with several of my coworkers. iNG is known for experimenting with wild, scientific techniques, and has been among the first to integrate &#8220;flavor-tripping&#8221; into its menu. Inducing that &#8220;trip&#8221; are miracle berries, whose properties tend to make sour or bitter foods taste sweet, among other taste-bud effects. So, before dessert arrived, our group was presented spoons that were filled to the brim with a pinkish powder. We were instructed to swallow the contents of the spoon, then taste the lemon and lime wedges served alongside it.<\/p>\n<figure id=\"attachment_384\" aria-describedby=\"caption-attachment-384\" style=\"width: 600px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/hillaryproctor.com\/2012\/12\/07\/best-bite-7-red-velvet-cake-and-miracle-berries-ing\/miracle\/\" rel=\"attachment wp-att-384\"><img decoding=\"async\" src=\"http:\/\/hillaryproctor.files.wordpress.com\/2012\/12\/miracle.jpg\" alt=\"Miracle berry powder\" width=\"600\" height=\"600\" class=\"size-full wp-image-384\" srcset=\"http:\/\/www.hillaryproctor.com\/blog\/wp-content\/uploads\/2012\/12\/miracle.jpg 754w, http:\/\/www.hillaryproctor.com\/blog\/wp-content\/uploads\/2012\/12\/miracle-150x150.jpg 150w, http:\/\/www.hillaryproctor.com\/blog\/wp-content\/uploads\/2012\/12\/miracle-300x300.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><figcaption id=\"caption-attachment-384\" class=\"wp-caption-text\">Miracle berry powder<\/figcaption><\/figure>\n<p>After downing the powder \u2013 about a third of which I blew onto my sleeve instead, in the heat of the moment \u2013 I tasted the lemon and lime, which indeed weren&#8217;t tart at all. It was surreal to know what a lemon wedge was supposed to taste like, and yet experience what seemed more like sugary lemonade. Soon after, dessert appeared: red velvet cake with a cheesecake nitrogen sphere and freeze-dried blood orange on top.
